The Diamond Gas oven features both interior and external construction in stainless steel AISI 304, with thermal insulation made from ceramic fibre. It includes a control panel with a stainless steel filter to prevent soiling of the components, and stainless steel feet for stability. The cooking chamber is fully welded, completely watertight, and designed with rounded corners and angles to avoid any roughness. A sealing gasket is fixed on the front of the cooking chamber, and the double-drawn bottom separates condensation from grease, directing it towards the drain. The oven is equipped with a standard steam condenser that reduces the temperature of the condensate at the drain and limits steam release when the door is opened. The platinum door structure and heat diffusers are easily removable for maintenance. The large motorized door accommodates all types of cooking, and the unique design of the enclosure, along with a side fan in AISI 304 stainless steel (CCRR), ensures uniform heat management and distribution. The double-glazed door features an ergonomic and athermal handle, automatic closing with a safety device to prevent accidental opening, and a condensate recovery unit integrated into the door. The interior window is mounted on hinges for easy cleaning and perfect hygiene. Air circulation between the panes of glass provides better thermal insulation. A micro-switch stops the fan when the door is opened, and side LED lighting offers a comprehensive view of the enclosure. For heating, the oven uses pulsed burners and grooved heat exchangers, which increase efficiency and save up to 20% on gas consumption and reduce harmful emissions by 20%. Steam is generated by an external gas boiler. The 7" TOUCH SCREEN control panel offers front access for easy and quick after-sales service and has an IPx5 protection rating against water jets.
