The Diamond Gas Convection Oven features both inner and outer construction in stainless steel AISI 304, with thermal insulation made from ceramic fiber. It includes a control panel equipped with a stainless steel filter to prevent soiling of the components, and stainless steel feet for stability. The cooking chamber is fully welded, completely watertight, and designed with rounded corners and angles to eliminate any roughness. A sealing gasket is fixed on the front of the cooking chamber, and a double-drawn bottom separates condensation from grease, directing it towards the drain. The oven comes with a standard steam condenser that reduces the temperature of the condensate at the drain and limits steam release when the door is opened.
The oven's design includes an easily removable platinum door structure and heat diffusers, as well as a large motorized door that accommodates all types of cooking. Its unique enclosure design, combined with a side fan made of AISI 304 stainless steel (CCRR), ensures uniform heat management and distribution. The double-glazed door features an ergonomic and athermal handle, automatic closing with a safety device to prevent accidental opening, and an integrated condensate recovery unit. The interior window is mounted on hinges for easy cleaning and perfect hygiene, while air circulation between the panes of glass provides better thermal insulation. A micro-switch stops the fan when the door is opened, and side LED lighting offers a comprehensive view of the enclosure.
The oven's electric heating is achieved through circular stainless steel shielded resistors placed behind the fan deflectors, while steam is generated by stainless steel shielded resistors in an external casing. The control panel, which includes a thermostat ranging from 25°C to 300°C and a timer from 1 minute to 8 hours, features a digital display with a clear and logical design. It offers front access for easy and quick after-sales service and has an IPx5 protection index, safeguarding against water jets from a lance.
